Pumpkin Soup
Ingredients:
- 2 tablespoons butter
- 1 small onion, chopped
- 1 clove garlic, finely chopped
- 2 teaspoons brown sugar, packed
- 1 can (14 ½ oz.) chicken broth
- ½ cup water
- ½ teaspoons salt
- ¼ teaspoons pepper
- 1 can pumpkin
- 1 can (12oz.) evaporated milk
- 1/8 teaspoons cinnamon
Directions: Melt butter in large saucepan over medium heat. Add onion, garlic and sugar, cook until soft. Add broth, water, salt and pepper; bring to a boil, stirring occasionally. Reduce heat to low, stir occasionally, for 15 minutes. Stir in pumpkin, evaporated milk and cinnamon. Continue stirring occasionally for 5 minutes.
