Pumpkin Soup

Ingredients:

  • 2 tablespoons butter
  • 1 small onion, chopped
  • 1 clove garlic, finely chopped
  • 2 teaspoons brown sugar, packed
  • 1 can (14 ½ oz.) chicken broth
  • ½ cup water
  • ½ teaspoons salt
  • ¼ teaspoons pepper
  • 1 can pumpkin
  • 1 can (12oz.) evaporated milk
  • 1/8 teaspoons cinnamon

Directions:
Melt butter in large saucepan over medium heat. Add onion, garlic and sugar, cook until soft. Add broth, water, salt and pepper; bring to a boil, stirring occasionally. Reduce heat to low, stir occasionally, for 15 minutes. Stir in pumpkin, evaporated milk and cinnamon. Continue stirring occasionally for 5 minutes.
